Drain & press tofu. You can just wrap the block of tofu in kitchen towels & lay it between pans with weights on top a cutting board on top to hold it down & press it well. Let the tofu press for 15-30 minutes. Preheat the oven to 425°F in the meantime.
Remove the weights & towels. Cut the tofu into cubes.
Add the tofu cubes to a large mixing bowl & add the olive oil, tossing until evenly coated. Add the cornstarch, nutritional yeast, salt, garlic powder, onion powder & pepper to the bowl & toss until evenly coated.
Lay the coated tofu cubes on a silicone baking mat or a parchment-covered baking sheet.
Bake for 15 minutes, flip them over to the other side & bake for another 15-20 minutes. Remove from the oven & serve with your favorite sauce.
