INGREDIENTS:
- 1 large cucumber, diced
- 1 lbs ripe tomatoes, seeded & diced, I used 4 campari tomatoes
- 1 yellow bell pepper, diced
- 1/2 white onion, diced
- 3-4 scallion/green onions, diced
- 1/2 cup fresh parsley
- 3 tbsp olive oil
- 3 tbsp lemon juice, about 1 lemon
- 1 tsp nutritional yeast
- 1/2 tsp salt
- 1/4 tsp pepper
METHOD:
- Chop & prepare the veggies (cucumber, tomatoes, bell pepper onion & scallion/ green onion) & add them to a large bowl.
- Next add the parsley, olive oil, lemon juice, nutritional yeast, salt & pepper to a mixer & blend.
- Add the dressing to the salad & mix well. Let it sit in the fridge for about 30 minutes if you have time, stir again & serve. Enjoy!
