Israeli Salad Ⓥ

INGREDIENTS:
  • 1 large cucumber, diced
  • 1 lbs ripe tomatoes, seeded & diced, I used 4 campari tomatoes
  • 1 yellow bell pepper, diced
  • 1/2 white onion, diced
  • 3-4 scallion/green onions, diced
  • 1/2 cup fresh parsley
  • 3 tbsp olive oil
  • 3 tbsp lemon juice, about 1 lemon
  • 1 tsp nutritional yeast
  • 1/2 tsp salt
  • 1/4 tsp pepper
METHOD:
  • Chop & prepare the veggies (cucumber, tomatoes, bell pepper onion & scallion/ green onion) & add them to a large bowl.
  • Next add the parsley, olive oil, lemon juice, nutritional yeast, salt & pepper to a mixer & blend.
  • Add the dressing to the salad & mix well. Let it sit in the fridge for about 30 minutes if you have time, stir again & serve. Enjoy!
